Frozen Raspberry Cheesecake! Every Sunday we have family dinner with all our kids that are available and we try out new recipes that we can share with you. It has been crazy, hot around here! That makes me crave anything cold and fresh! Because of this, I decided to make a frozen raspberry cheesecake, and boy am I glad that I did!
This is an easy recipe to make for your family and friends but it looks so fancy! It’s a celebration of the raspberry which is always good, and your mouth will do a happy dance the whole time you’re eating it! Shout to my Max, I garnished with mint because that’s what he did with his recipes and they looked fabulous!
Frozen Raspberry Cheesecake
Ingredients:
Crust
2 cups Oreo cookie crumbs
1/3 cup butter, melted
Cheesecake
2 cups raspberries, fresh or thawed frozen
1 Tablespoon fresh lemon juice
2/3 cups white sugar
1 8 ounces package whipped cream cheese
1 1/2 cups plain yogurt
1/2 cup powdered sugar
1/2 cup heavy cream, whipped
Directions:
- Crust: Spray a 10-inch spring-form pan with cooking spray.
- In a food processor or blender pulse the Oreo cookies until they are crumbs. Add the butter until the crumbs are moistened. Pour into the pan and press down with fingers. Place in the fridge while making the filling.
- Cheesecake: In a blender, pulse the raspberries until smooth.
- In a medium bowl, cream together the cream cheese, yogurt, and then add the white sugar, and powdered sugar, mix well. Add in the raspberries, and combine well.
- In a separate bowl, beat whipping cream until there are stiff peaks. Fold into the raspberry cream cheese mixture.
- Spoon into the prepared crust. Freeze until solid, this will take about 4 hours.
- Now it’s time to enjoy your frozen raspberry cheesecake!
