Mississippi Mud Cake! Here at Lou Lou Girls, we make a lot of cakes and that makes it really hard to impress us with new recipes. Well, folks, we have a winner! Earlier this month, I made a Mississippi Mud Cake and my husband fell in love!
What got me is the rich, gooey flavor of this cake. It completely takes over your taste buds, and your mouth can’t help but do a happy dance!
It is a chocolate, brownie cake covered with the gooey goodness of marshmallows and a drizzle of chocolate topping!
- 2 cups sugar
- 1 teaspoon salt
- 2 cups flour
- 1 stick butter
- 1/2 cup vegetable oil
- 1/2 cocoa
- 1/4 cup water
- 2 eggs
- 1 teaspoon baking soda
- 1/2 buttermilk
- 1 Tablespoon vanilla
- 1 bag mini marshmallows
- 1 stick butter
- 3 Tablespoons cocoa
- 6 Tablespoons milk
- 3 cups powdered sugar
- 1 teaspoon vanilla
- Preheat oven to 350 degrees. Grease 13 x 9 cake pan.
- In a large bowl, combine sugar, salt, and flour, and set aside.
- In a saucepan, melt the butter and then add the oil, cocoa, 1/4 cup water to a boil, then add to the flour mixture.
- In a different bowl, combine together the eggs, baking soda, buttermilk, and vanilla. Add to the chocolate mixture, mix well. Pour into the prepared pan and bake for 25 minutes.
- While the cake is baking, it's time to make the drizzle. Melt butter in a pan over a low heat. Add the cocoa and milk, and stir. Bring to a boil, then remove from heat. Stir in the powdered sugar and vanilla.
- After you remove the cake from the oven, cover it with the mini marshmallows. Pour the warm drizzle over the cake and the marshmallow layer. Let cake cool before serving.
