White Chocolate Coconut Macadamia Cookies
I have a neighbor that drools over these cookies. He hides them from his wife so he can eat them all without her knowing we even brought them over. They are the best homemade cookies I have ever had!
There are a few things you simply can’t substitute in this cookie. The first is the Organic Extra Virgin Coconut Oil. We found ours at Costco. It has a coconut flavor that is to die for, and it’s much better for you than shortening!
The next ingredient that my husband absolutely loves is the shredded coconut!
This recipe makes almost 5 dozen cookies, so be prepared to share.
Or you can roll the dough into balls and put them in the freezer on a cookie sheet. After they’re frozen, just pop them into a freezer bag and you have yummy cookie dough that is ready to use when you need a quick, but delicious home-baked treat!
White Chocolate Coconut Macadamia Cookies Printable Recipe
1 cup butter, softened
1 cup Extra Virgin Coconut Oil
1 1/2 cups granulated sugar
1 1/2 cups Brown sugar
1 teaspoon vanilla
1 teaspoon of coconut flavored extract
4 eggs
4-4 1/2 cups flour
2 teaspoons salt
2 teaspoons soda
1 cup of shredded coconut
1 cup chopped Macadamia nuts
2 cups white chocolate chips

Directions
Preheat oven to 350 degrees F. In a large mixing bowl, combine sugars, butter, and coconut oil until the mixture is fluffy. Add vanilla, coconut extract, and eggs one at a time.
In a separate bowl. mix together flour, salt, soda, and coconut. Add flour mixture to creamed mixture and blend until incorporated. Fold in nuts and chips.
Drop golf ball-sized balls of dough onto an ungreased cookie sheet. Bake for 10-12 minutes or until edges is a light golden brown.
I have to stop making these! They are too delicious and it’s hard to want to give them away!
