This Easy Cucumber Salad recipe is a family favorite recipe that people have been enjoying for ages. Thinly sliced cucumbers and onion are tossed in a sweet and tangy vinaigrette for a classic side dish.
Looking for an easy side dish? This is it! Every time I go visit my mom she sends me home with a million things from her garden and
cucumbers are one of them so I’m always trying to find new things to do with them.
This is a really easy mixture that creates a nice salad to go with just about anything! Plus its only 50 calories.
Cucumber Salad INGREDIENTS:
1 large cucumber
1 tsp salt
1 Tbsp. light sour cream
1 tsp chopped onion
1 tsp dill
1 tsp vinegar
1 tsp sugar
DIRECTIONS:
1. Slice cucumber into fairly thin slices.
2. Sprinkle with salt.
3. In a separate bowl, mix together sour cream, onion, dill, vinegar, and sugar. Cover and place in the fridge.
4. For best results, let dressing chill for at least an hour or two. But… if you’re in a rush just go for it!
5. Toss cucumbers with dressing and serve!
