Mini Strawberry Cheesecake
Over conference weekend, it was my birthday and my cute family spoiled me by making my favorite food for dinner!!! I LOVE cheesecake! My cute Jessica, made these adorable mini cheesecakes. The great thing about these little cakes, is that they are great for parties and they really stand out. You will LOVE, LOVE them!
Mini Strawberry Cheesecake Ingredients:
Crust
2 packages of graham crackers- crushed
1/4 butter, melted
1/8 cup sugar
- Preheat oven to 325 degrees
- Combine the ingredients in a small bowl
- Place cupcake liners in your muffin tin. Spray liners with non stick spray.
- Scoop about a tablespoon of crust in each liner and press down with a 1/4 measuring cup.
- cook for 7 minutes. Remove from oven and let cool.
Filling
3 packages of cream cheese (8 ounce)
1 can of sweetened condensed milk
1 zest of a lemon
1 teaspoon lemon juice
1 teaspoon vanilla
3 eggs
Mini Strawberry Cheesecake directions
- Preheat oven to 325 degrees
- Combine all the ingredients with your mixer, until light and fluffy.
- Scoop filling onto the prepared crusts. Make sure your filling is to the top of the liners.
- Cook for 20 minutes.
- Prepare danish dessert by using the glaze instructions on the box.
- Place a dollop on each prepared cheesecake.
- Garnish with a fresh strawberry.
