Beef Tostadas
Beef Tostadas! A staple recipe at our house, these Beef Tostadas have tostada shells that are topped with pinto beans, a spiced ground beef mixture, and all of our favorite toppings. This is a great weeknight dinner that can be done in 30 minutes.
I have picky eaters at my house! I will have one daughter that will love one recipe and the other one will completely hate it! They will usually agree on anything with a Mexican flair.
I love this recipe because anytime I can throw in some fresh veggies and they love it, I’m a happy camper! You can whip this up before one of your many trips running kids or if there are only two of you at home.
Beef Tostadas
Ingredients:
2 Tablespoons vegetable oil
1 pound ground beef
1 large onion, minced
1 teaspoon salt
1 Tablespoon chili powder
1 10 ounces can Mexican style diced tomatoes with green chiles
1 15 ounces can pinto beans, drained
2 cups coleslaw mix or shredded cabbage
1 lime juice, plus wedges for serving
1 teaspoon pepper
1 teaspoon salt
8 tostadas
1 1/2 cups shredded cheese
Directions:
- Heat the oil in a skillet over medium heat. Add the ground beef, onion, 1 teaspoon salt, and chili powder, cook, stirring and breaking up the meat with a spatula, until the meat is browned.
- Add the tomatoes, beans, and cook until heated through.
- In the meantime, toss the coleslaw with the lime juice, salt, and pepper in a bowl.
- Divide the tostadas and spoon the beef mixture on top, and then sprinkle the cheese on top. To melt the cheese, you can place them on a cookie sheet and turn on the broil in your oven. Remove from oven and top off with the coleslaw and serve with a wedge of lime!
