Chicken Enchilada Dip
So here it is, the final of three different dips that I made for the Super bowl. This dip is so creamy and full of flavor that you will be doing the happy dance!
You really can’t go wrong with this chip dip and you will be the hit of any party that you bring this to!
Chicken Enchilada Dip
Ingredients: click to print
5 cups rotisserie chicken, chopped
1 onion, diced
16 ounces cream cheese
1 can black beans, drained
1 can corn, drained
1 can Rotel tomatoes
1 can enchilada sauce
2 Tablespoons taco seasoning
2 cups shredded cheddar cheese
Directions:
- Preheat oven to 400 degrees.
- In a bowl, mix together the cream cheese, onion, beans, corn, tomatoes, enchilada sauce, and taco seasoning. Add the chicken.
- Put the mixture into a casserole dish and top with the cheddar cheese. Bake uncovered for 20 to 25 minutes or until it’s bubbly around the edges.

What size can of enchildada sauce did you use? My youngest loves chicken enchiladas. I have to make this for him.
Well I was looking for a good dip and found your recipe, I made it and it is delicious, being served at 2 super bowl parties. The only change I made was to add a can of green chilies.
