Deluxe Chocolate Cheesecake
My cute little daughter-in-law, Amber, is pregnant! In February, she had her birthday and it’s our tradition to make whatever the birthday person wants. At the time, all she wanted was chocolate!
So my mission was to come up with something that was full of chocolate and tons of flavor. The plan was to make this bad boy on Super bowl Sunday but Cassie had already made amazing cupcakes.
I almost forgot about this and then I came across some of the ingredients that I was going to use and decided I needed to make it! It wasn’t our Sunday that we get Ben and Amber. So my cute little daughter-in-law didn’t get to partake in this goodness but we will definitely be making this again!
Deluxe Chocolate Cheesecake
Ingredients:
1 brownie mix (and the ingredients to make them)
2 cups milk chocolate chips
12 ounces whipped cream cheese
1/2 cup sugar
1/4 cup cocoa powder
1/2 stick butter, softened
2 teaspoons vanilla
2 cups Cool Whip, thawed
3/4 cup chocolate chips
hot fudge topping
Directions:
- Spray your 8-inch springform pan with cooking spray, if you don’t have one, use an 8-inch pan. Make your brownies according to the package directions. Once brownies are baked, let cool completely. In a microwave-safe bowl, melt 2 cups of chocolate chips. Heat in microwave for a minute, stirring in each 30-second interval. Let cool.
- In a large bowl, combine cream cheese, both sugars, vanilla, cocoa powder, and butter. Mix until smooth and creamy. Add the melted chocolate chips and mix them completely.
- Fold in the Cool Whip until combined well. Add the extra 3/4 cup chocolate chips. Spread mixture over the brownies. Let set in the fridge for at least 60 minutes before serving. Garnish with a healthy drizzle of hot fudge topping.
