Cranberry Bread with Lemon Glaze
Cranberry Bread with Lemon Glaze! It’s November, people!!!! That means the Holidays are on my mind and everything that goes with it. I don’t about you but I don’t think about cooking with cranberries until this time of year.
Last year, I made mouth-watering Cranberry cupcakes and now I can’t get enough of Cranberries! This year, it’s Cranberry Bread with Lemon Glaze!!!
I have loved making dessert bread lately because they are so easy but still full of all that yummy goodness! This would be perfect for any Holiday gathering and your neighbors would love it for their neighbor gift!
- BREAD
- 2 cups of flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup chopped cranberries
- 1 egg
- 1/2 cup brown sugar
- 1/2 white sugar
- 1 cup buttermilk
- 1/3 cup butter, softened
- 1 teaspoon vanilla
- 2 Tablespoons fresh lemon juice
- STREUSEL
- 1/4 cup flour
- 3 Tablespoons white sugar
- 1 teaspoon cinnamon
- 3 Tablespoons butter, cold and cubed
- GLAZE
- 1 cup powdered sugar
- 3 Tablespoons butter, melted
- 2 Tablespoons fresh lemon juice
- Preheat oven to 350 degrees. Grease and flour a 9 x 5 loaf pan, and set aside.
- BREAD: In a bowl, combine the flour, baking soda, and salt. Stir in the cranberries, set aside.
- In a different bowl, cream together the butter, brown sugar, and white sugar. Add the egg to the mixture. Stir in the buttermilk, vanilla, and lemon juice.
- Slowly pour the butter mixture to the dry ingredients, and gently whisk until there are no lumps. Do not over mix.
- Pour batter into the prepared pan.
- STREUSEL: In a small bowl, combine the ingredients for the streusel. Make sure that the butter has turned into pea size crumbs by using a pastry cutter, your hands, or even two forks.
- Top evenly over the top of the batter and then gently pressing down on the streusel, so it will stick to the batter.
- Bake bread for 50 to 60 minutes. Poke the center of the bread with a toothpick. If it comes out clean it's done. Let cool in pan for about 10 minutes and then remove to cool completely.
- GLAZE: In small bowl, combine all the ingredients for the glaze using a whisk. Then drizzle over bread.

This looks so yummy! I love cranberry during the holidays and this seems so easy. Do you have to use fresh cranberries or could you use craisins?
I love the combination of cranberry and lemon flavors, and there is nothing better than a good homemade bread. I will definitely be trying this recipe in the very near future.
