Pressure Cooker Chicken

Eating out less is one of our goals this year. We’re working on trying to pack lunches (for me) and making dinner at night. We bought the Ninja Foodi that does it all and we love it and use it nearly everyday! The pressure cooker has been amazing, we get home and the boys have been starving and I just want something that is low maintenance. We had chicken in the freezer and potatoes and so I just whipped this up.
Pressure Cooker Chicken
Ingredients
- 4 boneless skinless chicken breasts
- 2 pounds baby potatoes
- 3 tablespoons olive oil
- salt and pepper to taste
- 1 teaspoon garlic powder
- 1/2 teaspoon oregano
- 3 tablespoons ranch seasoning – divided
- 1 cup chicken broth
- 3 tablespoons grated parmesan cheese
Pressure Cooker Chicken
Directions
- In a large bowl toss chicken and potatoes in olive oil, then season with salt and pepper. Stir together garlic powder, oregano, and 2 tablespoons of ranch seasoning. Sprinkle over the chicken and potatoes tossing to distribute the ingredients as evenly as possible.
- Add chicken broth to the pressure cooker, then place the chicken in the broth and top with the potatoes. Place the lid on in the locked position and turn the vent to the sealed position. Set pressure cooker to pressure cook for 10 to 15 minutes.
- Once the cook time is finished, do a quick release by turning the vent to the venting position. Once, float valve has dropped, remove the lid. Drain the pressure cooker or use the slotted spoon to transfer chicken and potatoes to a large platter.
- Sprinkle with Ranch seasoning and parmesan cheese and garnish with parsley.
