Crockpot Mississippi Roast
Crockpot Mississippi Roast is one of my personal favorites for dinner. Super easy and has the best leftovers.
As you can maybe tell from the picture this bad boy was falling apart. It cooked in the crockpot on low for 8 hours and came out perfect. I have a hard time eating leftovers so I used the leftover meat to make sour cream beef enchiladas! It actually was a fantastic combo, highly recommend. I love simple crockpot recipes on school days for dinner!
