Greek Yogurt Pound Cake with Peach Topping
This Greek Yogurt Pound Cake with Peach Topping will knock your socks off! The cake is super moist and totally delicious and then you top it off with peaches……it will leave you speechless!
I love making pound cakes in a loaf pan because it always seems to turn out and it’s a easy recipe that you can make for a weeknight dinner, after school snack, to a dinner that you are trying to impress!
I was watching the Food Network on Saturday and Michael Symon made a pound cake similar to this recipe, and I knew I had to try! Michael’s recipe had different ingredients but I knew I could make something special by being inspired by his dish.
VARIATIONS AND ADDITIONS
- If you don’t have Greek Yogurt in your house, you can use sour cream.
- Instead of peach topping, you can substitute a different fruit. You will probably want to use a different marmalade that will compliment the fruit you choose.
- Love nuts? Add a handful in your topping.
- You can double the recipe and freeze one loaf for later. Make sure to double wrap the loaf.
Greek Yogurt Pound Cake with Peach Topping
Ingredients
- POUND CAKE INGREDIENTS
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup butter , softened
- 1 cup sugar
- 3 large eggs , room temperature
- 2 teaspoons vanilla
- 1/2 cup Greek yogurt
- PEACH TOPPING INGREDIENTS
- 12 ounces orange marmalade
- Juice of 1 orange
- 1 peach, pitted and sliced
Instructions
POUND CAKE INSTRUCTIONS
Preheat oven to 350 degrees F. Grease and flour a standard 9” loaf pan.
In a small bowl, combine the flour, baking soda, and salt.
In a large mixing bowl cream the butter and sugar together until light and fluffy. Continue beating and add the eggs, one at a time, scraping bowl after each. Stir in the vanilla and Greek yogurt.
Slowly stir in the flour mixture, just until combined.
Pour batter into greased loaf pan. Bake for 40-55 minutes or until a toothpick inserted into the center comes out clean. Remove to a wire cooling rack.
PEACH TOPPING INSTRUCTIONS
While the cake is baking, add the marmalade, orange juice and peaches to a sauce pan, place over indirect heat and bring to a gentle simmer for the flavors to meld together, 3 to 5 minutes.
Notes
I baked mine for 45 minutes. Since every oven is different, I would check it at 40 minutes and then every 5 minutes until done.
