Crockpot Hamburger Casserole
Crockpot Hamburger Casserole is an easy dinner idea that takes very little effort.
Well now that school is in full swing, I didn’t realize how exhausted I would feel. Having three kids is no joke, now we have a first grader and he’s exhausted when he gets home after a full day of school. All my kids want to do when they get home is snuggle, I can’t say no because it’s my favorite.
Ellie is now the biggest mommy’s girl and never lets’ me put her down. That puts a damper on making dinner. I guess that means we’re getting back to the crockpot meals again. However, I’m still trying to cut as much fat out as I can in some of my favorite recipes. Give this one a try, we really liked it.
Ingredients
- 96% lean ground beef, browned
- 1/2 onion diced
- 2 cups of potatoes, chopped
- 1/2 salt
- 1 teaspoon garlic salt
- 1 can cream of mushroom soup
- 2 cups beef broth
- 1 1/2 cups penne pasta
- 1 1/2 cups 2% sharp cheddar cheese, shredded
- 3/4 cup low-fat sour cream
Directions

Cook ground beef on stovetop until no longer pink, then drain and put into slow cooker with diced onion, condensed soup, salts and diced potatoes. Stir together.

Set to high for 3 hours. Stir and pour in broth, stir again.

Pour in uncooked penne noodles and submerge into liquid on top. Cover crockpot again and cook an additional 30 minutes on high.

Lift lid, stir. Add 1 cup cheese and sour cream. Mix together well, then sprinkle remaining 1/2 c cheese on very top. Cover and cook for the last 20 minutes.
