I have loved Chicken Pot Pie my whole life! In fact, it’s my comfort food when I need a warm hug or I’m not feeling that good. It screams home!

 

I was listening to the TV, like usual, while I work, and they were talking about one of the number one recipes for 2023. I had to check it out and see what all the hoopla was about.

 

Trust me, this will blow your socks off! It is so EASY to make!!!

 

 

TIPS AND TRICKS

  • CHICKEN: I used a rotisserie chicken from the store, but feel free to use leftover chicken or turkey. You can even use a can of chicken.
  • VEGETABLES: We love peas and carrots but if you have some family member hating on peas, substitute them for your  family’s favorite veggie.
  • CHEDDAR BAY BISCUIT MIX: If you can’t find the Red Lobster biscuit mix, you can use any biscuit mix or Bisquick. 
  • WE LOVE LUMPS: Normally I would encourage you to get rid of lumps, but it’s normal to have a few lumps in a biscuit mix after whisking in the milk.
  • DON’T MIX: We always tell you to mix well with other recipes but this time DON’T! You will be amazed on how this turns out!
  • LET IT COOL: Give it 10 minutes after it’s done to set up. It will give the gravy time to thicken.

 

 

Pour melted butter evenly into the bottom of the casserole dish.

 

 

Layer the diced chicken evenly on top of the butter.
DO NOT STIR!

 

Place a layer of peas and carrots on top of the chicken layer.
DO NOT STIR!
In a bowl, combine the soup, chicken broth, garlic powder, onion powder, salt, and pepper.
Pour this over the chicken and veggie layers.
DO NOT STIR!

 

In a bowl, mix together the biscuit mix (without the seasoning packet), milk, and cheese.
Gently spread the biscuit mix evenly over the other layers.
DO NOT MIX!

Ingredients

  • For the Cobbler
  • 4 Tablespoons butter, melted
  • rotisserie chicken, meat removed and diced (about 3-4 cups)
  • 12 ounce bag frozen peas and carrots (or mixed vegetables)
  • 10.5 ounce can cream of chicken soup with herbs (or regular cream of chicken)
  • 2 cups chicken broth
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon onion powder
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • 11.36 ounce Cheddar Bay Biscuit Mix (reserve seasoning packet for later)
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • For the Butter Topping
  • 2 Tablespoons butter, melted
  • 1 teaspoon dry parsley
  • seasoning packet from box of biscuit mix

Instructions

  1. Preheat oven to 350˚F.

    Spread the melted butter over the bottom of a 9×13 casserole dish. Place the chicken over the butter layer. DO NOT MIX!

    Make a layer frozen vegetables evenly over the chicken. DO NOT MIX!

    Whisk together the cream of chicken soup, milk and chicken broth. Pour mixture over the casserole. DO NOT MIX!

    Whisk together the biscuit mix ,milk, and cheese. There may still be some lumps, that is okay. Pour the mixture over the chicken and veggies. DO NOT MIX!

    Bake for 55-60 minutes or until the sides are bubbling and the top starts to brown. Let sit 10 minutes to set, then serve.

    Remove from the oven and make butter topping. In a small bowl combine melted butter, parsley and the contents of the seasoning packet that came with the biscuit mix. Brush this evenly over the top of the cobbler.
