White Chocolate Oatmeal Cookies
White Chocolate Oatmeal Cookies are the perfect cookie. These are my most favorite cookie ever!
I’m always looking to try out new cookie recipes. The really good ones can be hard to come by. This one was born out of the things I had on hand and some different recipes I have found online.
I very rarely use white chocolate chips in my recipes but I had some and I love white chocolate macadamia cookies. Also, oatmeal raisin are in my top 3 favorite cookies. This is a blend of my favorites!
White Chocolate Oatmeal Cookies
Ingredients
- 1 cup butter, room temp
- 1 cup sugar
- 1/2 cup light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups rolled oats
- 3/4 cup toffee bits
- 1 cup white chocolate chips
- 1/2 cup graham cracker chunks
White Chocolate Oatmeal Cookies
Directions

Add butter, sugar, and brown sugar to a bowl. Using a stand mixer, mix the butter and sugars for a few minutes until lighter and fluffy. Add eggs and vanilla and mix again.

Add flour, cornstarch, cinnamon, baking soda, baking powder, and salt. Mix until just barely combined. Add oats, toffee, white chocolate, and graham crackers. Mix until mix-ins are distributed throughout the dough.

I use a 3 tablespoon cookie scoop to scoop out dough balls onto a parchment lined baking sheet. Preheat the oven to 350 F . When the oven is hot, bake for 14 to 17 minutes, until cookies are just starting to brown.
