Peanut Butter Brookie
This is a love story! Brownie falls in love with a Peanut Butter cookie and they have a baby. You will fall in love too!
My daughter loves brownies and usually she will make brownies at least twice a week! I love brownies but I also love cookies. This is the best of both worlds.
These little bars have so much flavor and it will satisfy any sweet tooth craving. I seriously think that homemade treats like these are SO much better than what you can buy at any cookie store!
TIPS AND TRICKS
- PEANUT BUTTER: I used smooth peanut butter but crunchy would be fabulous!
- BROWNIE: The brownie batter is a simple mix but you can substitute a brownie mix instead.
- STORAGE: Leftovers can be kept in an airtight container for up to 3 days. You can also freeze these little gems in an airtight container for up to 3 months.
- DO NOT OVER MIX: When your mixing remember, less is more! You don’t want to over work the batter.
- BUTTER: Brown the butter! Seriously, it makes such a difference to the flavor of your dessert. What does it mean to brown the butter? When melting the butter, let it cook a little longer, while stirring, until it becomes a caramel color.
Peanut Butter Brookie
Ingredients
- Peanut Butter Cookie Dough:
- ¼ cup butter, softened
- ½ cup peanut butter
- ¾ cup brown sugar, packed
- 1 egg
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking powder
- ½ cup milk chocolate chips (plus more for topping)
- Brownie Batter:
- 1 stick of butter
- 4 Tablespoons cocoa powder
- ⅔ cup granulated sugar
- 1 egg
- ½ teaspoon vanilla
- 1/2 cup flour
- 1 teaspoon salt
- 1 1/2 cups Reese's Cups, chopped (plus more for topping)
Instructions
Cookie Dough:
- Preheat oven to 350ºF and line an 8x8" baking dish with parchment paper or spray with cooking spray.
- In the bowl , beat the butter, peanut butter, and brown sugar together until smooth, about 30 seconds. Add the egg and vanilla, mix well.
- Add the flour and baking powder and stir until just combined, don't overmix. Stir in the chocolate chips.
Brownie Batter:
- In a medium saucepan over medium heat, melt the butter, then stir in the cocoa powder until smooth and glossy. Remove from the heat and stir in the sugar; allow to cool slightly.
- Add the egg and vanilla, combine well. Stir in the flour and salt, and then the chopped Reese's Cups.
- Rotating batter, spoon the brownie batter and cookie dough into the pan, smoothing out the top. Bake for about 30-33 minutes, or until edges are firm and golden. Immediately after removing from the oven, press more chocolate chips and Reese's Cups into the top, if desired. Cool in pan for at least 30 minutes before cutting.
