I thought this was the perfect dish to start out the week of love! If you are looking to get a proposal or even if you have been married a handful of years, this will help you get the results you want. lol!!! Yes, this is also great for the family.

 

I love skillet dinners because it seems to bring all the flavors together and all you need to add is a side salad or a delicious dinner roll. I didn’t even mention the best part, it’s done in less than 30 minutes.

TIPS AND TRICKS

 

  • PASTA: I used Rigatoni but if you don’t have that on hand, use a short pasta with lots of grooves to capture the sauce.
  • SUN DRIED TOMATOES: I used tomatoes that come in the oil, and then drizzle a little oil over the finished dish. You can use the dried ones but you will need to rehydrate them first.
  • BUTTER: If  you don’t want to use butter swap it out for olive oil or a coconut oil.
  • ROTISSERIE CHICKEN: I’m a fan of rotisserie chickens because of the flavor and how it saves you time when you are cooking. If you don’t have one on hand you, you can replace it with 2 chicken thighs or breasts.

Ingredients

  • 1 1/2 pounds rotisserie chicken, cut into 1-inch pieces
  • 1 lb ounces Rigatoni pasta
  • 2 tablespoons butter
  • 1 small onion, diced
  • 3 to 4 garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • a pinch of red pepper flakes (or more, if you like the heat)
  • 1 1/2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1 1/2 cups parmesan cheese grated
  • 1/2 cup sun-dried tomatoes, drained

Instructions

  1. Heat a large pot of salted water on the stovetop. Add the pasta and cook until al dente, according to package directions. Drain the pasta, reserve 1/2 cup of pasta water, and set aside.
  2. Heat the butter in a large skillet over medium heat. Add the diced onion and minced garlic and cook until fragrant.
  3. Pour the chicken stock into the pan and deglaze it, scraping all the browned bits off the bottom. Add the red pepper flakes, and bring the chicken stock to a low simmer.
  4. Turn the heat down to medium-low. Add the heavy cream and Parmesan cheese to the pan. Stir until the sauce is warm and the cheese is melted. Use reserved pasta water to thin out the sauce, if needed.
  5. Add the cooked pasta, chicken and sun dried tomatoes to the sauce and stir well to combine.
  6. Garnish with fresh parsley, if desired. Serve immediately.
