TIPS AND TRICKS

 

  • TEMPERATURE: You cook this on a high temperature so the chicken skin will be crisp and the potatoes get a crunchy skin. So good!
  • OVERCROWDING: Don’t overcrowd the veggies and chicken. That enables your chicken and potatoes to cook evenly.
  • VEGGIES: You can add more veggies that you love! Cherry tomatoes, green pepper, carrots. Go Wild!
  • GARNISH: You can garnish with a sprinkle a little Parmesan to jazz it up.
  • SPICE IT UP: Sprinkle with red pepper flakes to spice up.

Sheet Pan Chicken and Vegetables

Ingredients

  • 1 pounds baby potatoes, cut into 3/4-inch pieces
  • 1 large onion, coarsely chopped
  • 2 tablespoons olive oil
  • 3 to 4 garlic cloves, minced
  • 3 teaspoons salt, divided
  • 2 teaspoons pepper, divided
  • 1 teaspoon Italian seasoning
  • 1 1/2 teaspoon garlic powder
  • 1 tablespoon paprika
  • 6 bone-in chicken thighs (about 2-1/4 pounds),
  • 6 cups fresh baby spinach

Instructions

  1. Preheat oven to 425°. In a large bowl, combine potatoes, onion, oil, garlic, half of the salt, Italian seasoning, and half of the pepper; toss to coat. Transfer to sheet pan coated with cooking spray or parchment paper.
  2. In a small bowl, mix paprika, garlic powder and the remaining salt, and pepper. Sprinkle chicken with paprika mixture; arrange over vegetables. Roast until a thermometer inserted in chicken reads 170°-175° and vegetables are just tender, 35-40 minutes.
  3. Remove chicken to a serving platter; keep warm. Top vegetables with spinach. Roast until vegetables are tender and spinach is wilted, 8-10 minutes longer. Stir vegetables to combine; serve with chicken.
