Making dinner every night can become so routine!  You get your favorite standbys and it seems like that’s all you make. At least for me that’s how it feels.

My older daughter will tell you all she ate as a child was Mac and Cheese. It’s true that they ate their fair share but that is because the majority of them requested it. I also remind them that we didn’t have Pinterest then and so you ate the recipes that were handed down to you by your mothers.

It’s so fun to find something new now and know that your family is going to love it! This is one of them!

Flaky biscuit crust, layered with a taco seasoned beef and topped off with a creamy, cheesy sauce. That’s heaven in a pan!

Chicken Bacon Ranch Mac and Cheese

Easy Chicken Bacon Ranch Mac & Cheese Casserole

Ingredients

  • 3 Tablespoons Butter
  • 2 Tablespoons Flour
  • 1 1/2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 Cup Milk
  • 1 Cup Heavy Cream
  • 2 Cups Shredded Cheddar Cheese
  • 1/2 Cup Grated Parmesan Cheese
  • 1/2 Cup Shredded Mozzarella Cheese
  • 1 packet dry Ranch Salad Dressing
  • 1 rotisserie Chicken, diced
  • 3 Cups Cooked Macaroni
  • 2/3 Cup Italian Breadcrumbs
  • Cooking spray
  • 10 Bacon Strips, cooked and crumbled

Instructions

  1. Preheat the oven to 350°F. In a Dutch oven, melt butter over medium heat. Stir in flour, salt and pepper until smooth, continuing to cook for 30 seconds to cook out the flour taste.

    Gradually whisk in milk, and cream. Bring to a boil, whisking constantly; cook and stir 1-2 minutes or until thickened. Using a wooden spoon, stir in cheeses until blended. Stir in dressing.

    Add chicken and sauce to macaroni, tossing to combine. Pour into a greased 9x13-inch baking dish.

    In a separate bowl, toss the bread crumbs with melted butter; sprinkle over macaroni. Make a layer of bacon over the macaroni. Bake for 30 to 35 minutes.
