Pineapple Dream
Hello Summer! This recipe screams parties, potlucks, and family gatherings. This creamy, sweet, and refreshing dessert is the hostess with the mostess!
I’m getting so excited for Summer! I got my Summer flowers in their pots. Planted a couple more Lilac bushes and the weather is fabulous! I getting so excited for Summer parties that I had to share a dessert that will go so well with any occasion.
This is a super easy dessert to put together before your next shin dig! I have made a dessert that is quite similar and is requested all the time. It’s Strawberry dessert. Both desserts are the kind that you want to lick the pan when it’s gone because it’s that good!
TIPS AND TRICKS
- Before you serve this, place it in the freezer for up to an hour. It helps when you are serving it. If that’s not possible, the yummy goodness will still shine through.
- If you have leftovers, which I will be surprised, cover it with plastic wrap, and it should stay good up to 3 days.
- I used Cool Whip but you can use homemade whipped cream. I would add a little gelatin to make it more stable.
- You can use fresh fruit but the consistency will change a little.
Pineapple Dream
Ingredients

- For The Crust:
- 2 ½ cups graham cracker crumbs
- 1 stick butter, melted
- 1/2 cup granulated sugar
- 1 teaspoon salt
- For The Filling:
- 16 ounces whipped cream cheese
- 2 cups powdered sugar
- 20-ounce can crushed pineapple drained well
- 4 cups whipped topping thawed ( I used Cool Whip)
- For the Topping:
- 1 large package instant vanilla pudding mix
- 1 20 ounce can crushed pineapple, drained
- 2 cups whipped topping
- 2 cups toasted shredded coconut
Instructions
Preheat the oven to 350 degrees
In a bowl, combine graham cracker crumbs with melted butter, sugar and salt.
Press the mixture into a 9×13 inch pan. And bake for 10 minutes. Remove from the oven, and allow to cool completely.
In a mixing bowl, combine filling ingredients, just not the pineapple and with a hand mixer beat until smooth and creamy.
Fold in the drained crushed pineapples, and spread the mixture over the cooled crust in an even layer. Smooth the top with a spatula.
In a separate bowl, Combine the topping ingredients. Smooth out with a spatula. Place your oven on high broil. Spread out the shredded coconut on a sheet pan. Cook until the coconut is toasted. Let cool.
Sprinkle the toasted coconut on top, and chill in the fridge for at least 4 hours and preferably overnight before serving.

I’ve made this before…it’s very refreshing…instead of crumbs, I use toasted coconut on top!!
