Taco Cups
Taco Tuesday just got better! These tasty little morsels are perfect for that busy night dinner and fun enough for any party!
My 21 year old has been on the search for new recipes for me to try out because she reaps the reward at the end! She seriously loves tacos…..maybe more than she loves her parents! lol!
This is such a yummy recipe that you can have it done and to the table in less than an hour.
TIPS AND TRICKS
- PROTEINS: I used hamburger but and kind of protein would be fabulous! Ground beef, rotisserie chicken or add a little bacon. Bacon makes everything better, right?
- ADD INS: Go crazy!! You can add anything you would to your traditional taco. Black beans, corn, green chiles would be sooo good!
- BISCUITS: I spilt my biscuits in half. It seems help the biscuits cook more evenly.
- LEFTOVERS: If you have any leftovers, place them in an airtight container.
Taco Cups
Ingredients
- 1 pound ground beef
- 1 small chopped onion
- 1 envelope taco seasoning
- 1 tubes (8 ounces each) refrigerated Grand biscuits
- 1-1/2 cups shredded Mexican cheddar cheese
- Optional toppings: Chopped tomatoes, sliced ripe olives, shredded lettuce, sour cream, guacamole and salsa
Instructions
- Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink, breaking meat into crumbles; drain. Stir in taco seasoning and 1 cup of cheese; heat through.
- Spray muffin tin with cooking spray. Spilt your biscuits in half, and then stretch them out, so it will make it easier to press them in the muffin tin. Press lightly onto bottoms and up sides of the greased muffin cups.
- Fill each muffin cup with 1 rounded tablespoon of beef mixture; sprinkle each with 1 tablespoon cheese. Bake 14-16 minutes or until dough is golden brown. Serve with toppings as desired.
