We love our cookies around here! There’s something about a dessert in circle form that makes all your dreams come true. I think it’s the fact that you can enjoy something so delicious that fits in your hand.

 

I mean, how can you go wrong with something that has peanut butter, chocolate chips, corn flakes and oats? Right!?! You have the creamy goodness of the peanut butter, chocolate chips and then the crunch of the cereal.

 

 

 

Peanut Butter Cowboy Cookies

Peanut Butter Cowboy Cookies

Ingredients

  • 1 large egg
  • ½ cup butter, softened
  • 1/2 cup creamy peanut butter
  • ½ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 2 teaspoons vanilla
  • 1 ¼ cups flour
  • 1 cup old-fashioned whole-rolled oats, not quick-cook or instant
  • 1 teaspoon baking soda
  • 1 cup milk chocolate chips
  • ¾ cup Cornflakes or Special K cereal, Frosted Flakes or a similar cereal may be substituted

Instructions

  1. Preheat oven to 350F. Set oven rack to the middle of the oven.
  2. In a large mixing bowl, add the egg, butter, peanut butter, sugars, vanilla and combine on a medium speed.
  3. Scrape the sides of the bowl. Add the flour, oats, baking soda and beat until mixed well.
  4. Add the the chocolate chips, cornflakes, make sure it's combined.
  5. Using a 1/4 cup ice cream scoop, scoop out dough and place cookie dough 3″ apart on a parchment lined cookie sheet. Cookies may be baked at this point, or frozen until needed.
  6. Bake for 10-12 minutes until the edges are set and lightly brown. The middle will still look somewhat underbaked. That is okay. They will firm up as they cool.
  7. Once baked, remove tray from oven. Leave cookies on the tray for 3 minutes, then slide cookies and parchment paper off the tray and onto a cooking rack to finish cooling. Store cookies in an airtight container. Serve for breakfast or as an afternoon snack. Delicious!
