In honor of the 4th of July, I thought we needed to try something that would knock your socks off! Well, here it is! The crunchy batter just makes this a experience that everyone needs to enjoy! Drizzle a little honey on top and your tastes buds will be in heaven.

Can you imagine having this at your next BBQ?  Everyone will think your ready for the Food Network! Move over Martha Stewart!

 

 

Deep Fried Corn on the Cob

Deep Fried Corn on the Cob

Ingredients

  • 3/4 cup yellow cornmeal
  • 3/4 cup flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/3 cup white sugar
  • 4 teaspoons baking powder
  • 1 egg - beaten slightly
  • 1 1/2 cup buttermilk
  • ¾ gallon vegetable oil for frying
  • 6 ears of corn on the cob – husked and left whole or cut in half horizontally
  • 1/4 cup cornstarch for rolling corn in prior to frying - this helps the batter to stick
  • 6 long or 12 halved wooden skewers.
  • honey, for garnish

Instructions

  1. I used a deep fryer but if you don't have one, use a Dutch Oven and heat the oil to 375F.
  2. Combine corn meal, flour, salt, black pepper, sugar and baking powder in a medium bowl. Mix well.
  3. Combine egg and buttermilk in a medium bowl and mix well.
  4. Add the dry ingredients to the wet ingredients and stir just enough to moisten the batter.
  5. Stick the skewers at least half-way into each ear of corn.
  6. Place the cornstarch on a plate and roll each ear of corn in the cornstarch then tap off the excess.
  7. Pour the batter into a deep bowl - leave some room at the top so the batter won't overflow when corn is dipped into the batter.
  8. Hold the corn by the skewer and dip in and out of the batter. I had to use my hand to cover the batter on the corn. It looks like it won't stick but it will.
  9. Wipe off excess batter with your finger,
  10. Slowly and carefully, while holding the end of the skewer, dip the batter-dipped corn in the hot oil., and leave in the fryer.
  11. Turn the corn often until golden brown - approximately 3 to 5 minutes. Depending on how brown you desire.
  12. Set on a cooling rack which has been placed over paper towels.
  13. Repeat until all corn is cooked. Drizzle with honey!
