Starting to meal prep for the school year and High Protein Chicken Bacon Ranch Alfredo was a great start.
It’s really hard in the school year to stay on track with my fitness goals with full time work and the kids and their activities. It’s nice at lunch at school to be able to get out of the building and go grab something. It’s hard however to stay on track while doing that. There are too many good options around my school and I want all the good things.
I’ve been trying to make foods more macro friendly. I’m making meals I can freeze and then reheat. I’m on a burrito kick, but Matt told me he would get sick of burritos. I’ve decided I should try and do a few other things so that we don’t get too bored. I’m just doing a bunch right now so that we can have some stuff to use over the next couple months to get ready.
High Protein Chicken Bacon Ranch Alfredo
Ingredients
- 32oz chicken breast (896g), cubed
- 6 slices turkey bacon, chopped
- 1 packet ranch seasoning
- 30g honey
- 1 tablespoon chopped fresh dill
- 1 teaspoon Garlic powder
- black pepper to taste
- 1 tablespoon olive oil
- 3 sweet onions, diced
- 8 cloves minced garlic
- 16oz chicken bone broth (448ml)
- 672 grams pasta, cooked to 50%
- 10 slices center cut bacon
- 3 chopped green onions
Blended sauce:
- 800g 2% cottage cheese
- 160g parmigiano reggiano
- 420ml fat free milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt & pepper to taste

Directions
- In a large skillet, heat the olive oil to medium heat and add the garlic and onions and cook until fragrant and translucent. Salt to taste. Then add chicken bone broth and reduce completely.
- Put the chicken, turkey bacon, ranch, honey, dill and garlic powder in the crockpot. Then add in garlic onion mixture. Cook on low for 3 to 4 hours or on high for 1 to 2 hours.
- Once chicken is cooked through shred and start making the blended cheese sauce. Put all the ingredients for the blended cheese sauce in the blender and blend until completely smooth. Dump in with the shredded chicken and stir and heat in the crockpot
- Meanwhile bake the center cut bacon at 400 degree for 20 minutes or until desired crispiness and cook pasta to 50% completion, or half of what the package says.
- Add the pasta to the crockpot and cook another 15 minutes until the noodles are finished cooking. Add in chopped bacon.
- Garnish with green onions.
- Store everything frozen – no need to thaw, just toss in the microwave with 2-3 tablespoons of milk or water, cover with a paper towel, microwave for 3-4 mins, mix, then microwave another 1-2 minutes. Add more liquid to reconstitute the sauce/increase creaminess
