Orzo Summer Salad

If you are like me, you have your favorite stand by salads that you make every time! You know what I mean, potato salad, broccoli salad, or the perfect pasta salad. Don’t get me wrong, these are perfect but one thing I have learned from the blog is that there is so many delicious salads just waiting to be made! This is one of them!
Cassie has made a lot of delicious dishes featuring Orzo, and I haven’t made one! I love that Orzo is small enough for each bite but big enough to grab the flavor of each piece of the salad!
This would be so good for a light dinner, just add a warm baguette and your ready to go! Or it hang with any crowd at your next BBQ, potluck or family dinner.
Orzo Summer Salad
Ingredients
- 1½ cup dry orzo pasta
- 1 bottle Greek Salad Dressing
- 1 teaspoon salt
- 2 cucumbers, halved vertically, and sliced ¼-inch thick
- 2 cups halved cherry tomatoes
- 1 can garbanzo beans, drained, and rinsed
- 4 ounces Queso Fresco cheese, crumbled
- ⅓ cup thinly sliced red onion
- ½ cup sliced black olives
- black pepper
Instructions
Bring a stock pot of salted water to a boil. Prepare the pasta according to the package directions, or until slightly past al dente. Drain the orzo and cool with tap water, fluff with a fork so it doesn’t stick together.
You can buy a bottle of Greek Salad dressing or mix together a 1/4 cup olive oil, 3 Tablespoons red wine vinegar, 1 garlic clove, 1 tsp lemon juice, 1/2 tsp oregano, 1/4 tsp Dijon mustard and sea salt, pepper, to taste.
In a mixing bowl, toss together the cooked orzo, cucumbers, tomatoes, garbanzo beans, cheese, red onion, and olives. Drizzle the dressing over the salad, season with freshly ground black pepper, and toss to coat.
