Strawberry Earthquake Cake

Get ready to make the earth move!  Strawberry Earthquake Cake is a simple dessert that is chuck full of cheesecake flavors and fresh strawberries.

This is such a fun cake to make and one of the best thing’s is that it only take minutes to put together.

For years, I have made a dessert with a similar flavor profile, Strawberry dessert. It just wasn’t a cake, but it always received rave reviews. It’s fun to use the same flavors and create something totally different that will put a smile on everyone’s face. This is it!

I always know when it’s a hit when my husband can’t keep his hands off it. You will see what I mean, after you make this dessert. It is completely “moreish”!

Why is it called a Earthquake cake? As you can see from the picture, it looks like the cake has went through a earthquake!

Strawberry Earthquake Cake

Ingredients

• 1 box white cake mix
• Ingredients required by cake mix (usually water, oil, and eggs)
• 2 cups strawberries, chopped
• 1 8 oz. cream cheese, softened
• 1 stick of butter, melted
• 4 cups powdered sugar
• 2 teaspoons vanilla
• 1 cup white chocolate chips

Instructions

1. Preheat oven to 350° degrees. Grease a 9x13 inch cake pan.
2. Prepare the cake mix according to package instructions. Gently fold in the chopped strawberries. Pour the batter into the prepared baking dish.
3. In a medium bowl, combine together the cream cheese, butter, powdered sugar, and vanilla until smooth. Drop spoonful's of this mixture over the cake batter.
4. Sprinkle white chocolate chips over the top.
5. Bake for 35-40 minutes, or until the cake is set and the edges are golden brown.
6. Allow the cake to cool before serving. The top will have a beautiful cracked, earthquake effect with delicious pockets of cream cheese and strawberry
