We love cookies around our house. My husband, a few years ago, was on a mission to make the perfect sugar cookie, and he did! The problem was, our daughter was asking him to make sugar cookies every week.

We love our daughter, but the traditional sugar cookie takes a few steps, and some time to make them. Until now! We have decided that this is a better cookie than the go to sugar cookie recipe! What even makes it better is that it takes less time to prepare and less mess!

Ingredients

  • For the Bars
  • 2 sticks of butter (2 sticks), at room temperature
  • 2¾ cups flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 (8-ounce) package whipped cream cheese
  • 1½ cups granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla
  • For the Frosting
  • 1 stick of butter, at room temperature
  • 1 8 ounce, whipped cream cheese
  • 3 cups powdered sugar
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • A drop or two of gel food coloring (optional)

Instructions

  1. Preheat oven to 350 degrees F.  Lightly butter a 9-by-13-inch baking pan. Line the pan with parchment paper.

    Bars: In a medium bowl, whisk together the flour and salt. In a large bowl with an electric mixer, or in the bowl of a stand mixer fitted with the paddle attachment, beat butter and cream cheese on medium speed until well blended, about 1 minute. Add the granulated sugar and beat until smooth, about 1 minute. Add the egg and vanilla and beat on low speed until well combined, about 1 minute. Turn off the mixer and scrape down the bowl with a rubber spatula. Gradually add the flour mixture, mixing on low speed just until blended, about 1 minute.

    Using a spatula, scrape the dough into the prepared baking pan and spread it into an even layer. Bake just until the edges are starting to turn light golden brown, and a toothpick inserted in the middle has moist crumbs, 20 to 25 minutes. (Do not overbake! The bars should be quite moist, and almost slightly under baked in the middle.) Let cool completely.

    Frosting,: Cream together the butter, cream cheese and powdered sugar until smooth, add a drop or two of milk). Add in the vanilla, and food coloring (if using), and mix until the frosting is light and fluffy, 1-2 minutes.

  1. Spread the frosting over the cooled bars and top with sprinkles
