Life is too short not to eat good food! This meatloaf would be amazing on it’s own but you slather it with mashed potatoes, ooey, gooey cheese and crumbled bacon, and you will think you died and went to heaven!

With school back in session and the kids busy with their Fall sports, it’s always good to have a recipe that you can throw together quickly, and that you don’t have to fight with them on whether or not they will eat it.

This is it! It has all the feel good ingredients that make you feel right at home! I love casseroles because the whole meal is in just one pan! Heck, I bet you have most of the ingredients on hand right now!

 

TIPS AND TRICKS

 

HAMBURGER: I used hamburger but you can substitute it out with ground turkey, chicken or pork. It would be super delicious with chunks of leftover roast.

VEGGIES: I didn’t add a lot of veggies to this but can add a layer of frozen or fresh veggies on top of the meatloaf. 

POTATOES: Fresh is best but we all know that some nights that isn’t going to happen. If that is one of those nights, whip up some instant potatoes instead of fresh.

STORAGE: Leftovers will stay good up to 3 days, if covered tightly. You can also freeze it up to 3 months.

Ingredients

  • 2 pounds of hamburger
  • 1 small finely chopped onion
  • 3 to 4 cloves of minced garlic
  • 1 cup of seasoned bread crumbs
  • 1 tablespoon of Worcestershire sauce
  • 1 large egg lightly beaten
  • 1/2 cup of cottage cheese
  • 1/2 cup of BBQ sauce
  • 2 pounds of potatoes peeled and diced
  • 1 stick of butter
  • 1/2 cup of sour cream
  • 1/2 cup of half-and-half
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 slices of thick bacon cooked and crumbled
  • 2 cups of shredded cheddar cheese

Instructions

  1. Preheat the oven to a temperature of 375°F. Prepare a 9×13 inch baking pan by spraying it with a nonstick cooking spray.
  2. In a large bowl, combine the ground beef, onion, garlic, seasoned bread crumbs, Worcestershire sauce, lightly beaten egg, cottage cheese, and BBQ sauce.
  3. Transfer the meat mixture into the prepared baking pan, ensuring it is evenly spread. Bake in the preheated oven for a duration of 30 minutes.
  4. At the same time, place the diced potatoes in a pan filled with water and cook over medium heat until they are tender.
  5. Once the potatoes are cooked, drain the water and incorporate the unsalted butter. Using a hand mixer you can get a smooth consistency. Add the sour cream, half-and-half, salt, and black pepper. Mix until all ingredients are well-combined.
  6. After the meatloaf has baked for 30 minutes, remove it from the oven and carefully drain any excess grease.
  7. Add an even layer of the mashed potatoes over the meatloaf. Next, add a generous sprinkling of shredded cheddar cheese and crumbled bacon.
  8. Place the casserole back into the oven and bake for an additional 15 minutes. Make sure the potatoes are thoroughly heated and the cheese has completely melted.
  9. Once completed, remove the casserole from the oven and let it cool a little before serving.
