Need a dinner idea for tonight? This is it! You throw all the ingredients into one pan, and while it’s cooking, you can relax!
I have seen versions of this recipe all over the internet and wondered how it would taste. Would the rice cook evenly? Would my family love it, or tell me never to make it again? So of course, it became a challenge! I needed to try it and if it was fabulous, I would share it with you! The jury is in……ITS FABULOUS!!!
The flavors blended so well! The rice was cooked perfectly, and honestly, I threw everything into one dish and the magic happened! It reminds me of a crockpot dish but sometimes I think baking it in the oven gives it a whole different depth of flavors!

TIPS AND TRICKS
LAYER: Make sure to layer evenly and don’t mix. It will turn out!
PROTEIN: I used hamburger but if that’s not your jam, feel free to use ground turkey or chicken.
LET IT REST: If you can, give it about 5 to 10 minutes to rest, before serving.
STORAGE: Leftovers will stay good up to 3 days in an airtight container. You can also freeze this up to 3 months.

Ingredients
- 1 cup long grain white rice (uncooked)
- 1 small onion, finely chopped
- 1 cup corn or peas (canned or frozen)
- 1 lb. ground beef, browned and drained
- salt and pepper, to taste
- 2 cans tomato soup, mixed with
- 1/2 cup water
- 2 to 3 cups shredded cheese
- 4-6slices bacon, cut in half (optional)
Instructions
- Preheat oven to 350 degrees F.
- Grease casserole dish.
- Place all ingredients in casserole dish, one at a time, in the order they are listed in.
- (Seven layers, starting with rice and ending with bacon.) Only put half of the cheese before the bacon. Bake, covered, for 1 hour.
- Uncover, add the remaining cheese and bake 30 minutes longer.
