Caramel Cake in a Jar
Personal Progress night with the young women in my ward, is always a great chance to try a new recipe out. Girls love treats and they are totally honest about if they like it or not. This was a big hit!!!
I had to pry the bottle away from a few of them because it was time to go. The other great thing about this recipe is that it’s easy to transport. It would be great for birthday parties to picnics. You really need to give this one a try!!!!
Caramel Cake in a Jar
Ingredients:
3/4 cup butter
1 cup milk
3 cups flour
2 1/2 teaspoons baking powder
2 teaspoons cornstarch
1 teaspoon salt
4 eggs
2 cups sugar
2 teaspoons vanilla
Icing:
2 1/2 cups brown sugar
1/2 cup butter
1 cup corn syrup
2 teaspoons vanilla
2 bags caramel kisses
Directions:
- Preheat oven to 325 degrees. Spray your cake pan with cooking spray.
- Combine butter and milk in a small saucepan and heat on low until the butter is melted. Stir and let cool.
- Combine flour, baking powder, cornstarch, and salt in a bowl, I used my whisk.
- In a separate bowl, beat eggs and sugar on high, make sure to scrape the sides of the bowl. Beat until smooth and thick.
- Stir the flour mixture into the egg mixture. Mix well. Add the cooled milk and butter mixture and then the vanilla. Stir well and pour into prepared pan.
- Bake for 35 to 40 minutes or until the cake is golden brown and bounces back to the touch. Cool completely.
- Icing: In a saucepan, combine brown sugar, butter, vanilla and corn syrup. Bring to a boil over a medium heat. Stir well and adjust heat so the frosting boils gently. Cook for 3 to 4 minutes.
- Remove from heat and let cool for about 3 to 4 minutes.
- Slice the cake into bite size pieces and make a layer at the bottom of the jar.
- Place 4 to 5 Kisses on top of the cake layer and drizzle icing on top. Repeat steps until the jar is full.
- Garnish with a little whip topping. All I can say is…..YUM!
