Whole Wheat Pancakes
If you’re thinking of making a change to your diet, don’t worry, you won’t have to give up everything you love! Eating healthy doesn’t have to be boring, in fact, it should be the opposite.
Fresh, homemade food is always better than store-bought, in my opinion, and the great thing about homemade is that it’s usually cheaper, and you can control what goes into it. Most store-bought, pre-made food is full of weird chemicals you can’t pronounce and loaded with sugar. Just take a look at the labels on your food if you don’t believe me.
These pancakes are an awesome example of how you can re-vamp your diet, or make small changes to improve your health, while still enjoying the foods you crave.
I promise that your family won’t notice a difference! I test all of my recipes on my kids, and I would not share them if someone in my family didn’t think they were good. My kids asked for seconds and the hubby came home at finished them up. My kids can be just as picky as the next kid…trust me on this one!
Whole Wheat pancakes
1/2tsp baking soda
1 tsp baking powder
1 tsp kosher salt
2 cups whole wheat flour
1 T honey
4 T Coconut oil & 2 egg yolks, mixed
2 cups of plain yogurt & 2 egg whites, mixed
1 cup of coconut milk
Whole Wheat Pancakes
Directions:
Sift together dry ingredients. Add pre-mixed wet ingredients. Use coconut oil to grease a hot, cast iron skillet. Cook over medium heat until bubbles start to form in the center of the pancake, then flip and cook until the pancake has risen and the bottom is a light golden brown.
Top your pancake with your favorite berries, or go simple with a little butter or coconut oil and organic maple syrup.
