Banana Bread Quinoa
I wanted to make something healthy that I could keep in the fridge all week and enjoy breakfast without a ton of effort. Quinoa is so good for you and has tons of health benefits. It’s high in protein, essential vitamins, and fiber.
This recipe is great because it keeps well in the fridge and is great with a little milk. Here’s how you make it.
Banana Bread Quinoa
3 very ripe bananas
2 eggs
1 cup of milk or almond milk
1/2 teaspoon of baking soda
3 T. of brown sugar
1/2 cup of chopped almonds
1 T. of Cinnamon
1 cup of quinoa
2 cups of water
Banana Bread Quinoa
Directions:
Bring 2 cups of water to a boil and add quinoa with 1 T. of cinnamon. Cover, lower heat, and cook for 15 minutes. While Quinoa is boiling, puree bananas, eggs, milk, baking soda, and brown sugar.
After Quinoa has cooked for 15 minutes, pour into a 9 x 9 pan lightly greased. Combine Quinoa with banana mixture and almonds and bake for 20 minutes at 350 degrees.
Let cool for 10 minutes. I like to serve mine with a little bit of milk at the bottom of the bowl.
I really loved this recipe! My house smelled like a yummy loaf of banana bread!

I like quinoa a lot but I don't care for banana bread. Would this work with apples and fat free milk?
Yes, any fruit would work, I would probably bake the apples separately first, until they are soft, then add the quinoa and egg mixture on top. Any type of milk would work!

Just so you know, this mostly just tastes like banana bread. It won't hold up like a bread would:)
