Egg Omelette Cupcakes
Our family loves omelets in the morning for breakfast but we have a 14 year old who is always in too big of hurry to get to school or just can’t eat because it will make her sick!!!! So, I have been trying to find something that is delicious, quick and easy to throw at her as she runs out the door for school.
I think I will always make these little gems when I want a omelet because they are so fluffy and yummy( yes, fluffier than our pan omelets) and super easy. The fun thing is that everyone in the family can design their own omelet. You could also make a big batch and freeze them and throw them in the microwave one at a time, when your in a hurry.
Egg Omelette Cupcakes
Ingredients:
10 eggs
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup cheese, grated
1/4 cup ham, diced
1/4 cup green onion, diced
1/4 cup tomato, diced
Note: This is what we put in our omelets but you can pick and choose what veggies would be great for your family. Some suggestions: bacon, spinach, avocado and mushrooms.
Egg Omelette Cupcakes
Directions:
- Preheat oven to 350 degrees.
- Break eggs into a bowl and add milk, salt and pepper. Whip eggs until their light and fluffy. Add veggies and stir(if your making different ones for each person in your family wait to add the veggies).
- Spray muffin tin with a non stick spray.
- Pour egg mixture into the muffin tin. I filled mine almost to the top. If your making individual ones, fill them 3/4 full and add veggies, stir.
- Bake for 25 minutes.
