Chicken Avocado Salad
We made cute, little salads in waffle cone bowls for Shay’s bridal shower. This is my new, favorite chicken salad recipe!!! This little salad has so many flavors, your mouth will be doing a happy dance!
Chicken Avocado Salad
Ingredients:
1 Rotisserie chicken, shredded
3/4 cup green pepper, chopped
3/4 cup craisins
3/4 cup sliced almonds
2 avocados
1 cup vanilla yogurt
1 teaspoon garlic powder
1/2 cup onions, chopped
1 teaspoon salt
1/2 teaspoon pepper
2 celery stalks, chopped
Chicken Avocado Salad
Directions:
- Combine chicken, celery, green pepper, onion, craisins and almonds in a large bowl. Make sure the chicken is completely cool, so it won’t melt the yogurt.
- In a separate bowl, mash avocados with a fork but you may want to process them if they are too firm. Add yogurt, garlic salt, salt and pepper and mix thoroughly.
- Add to chicken mixture and fold together until all ingredients are covered.
We served them in waffle cones but it would taste great in cucumber bites or even a croissant roll.
I've seen different versions of this salad lately. I like the addition of craisins that you used. Yummy and Pinned. 🙂
