Ramen Chicken Noodle Soup
Soup is my jam in the Winter months! It’s my comfort food plus different soup recipes are usually so easy to make. Perfect for any mom that is running around trying to feed their families and get the rest of the things done on their to-do list. My kids have always loved Ramen noodle soup and it’s a staple when they go to college. This recipe is Ramen soup on steroids.
Ramen Chicken Noodle Soup
INGREDIENTS
1 tbsp. vegetable oil
1 yellow onion, chopped
1 large carrot, cut into thin 2″-long pieces
2 cloves garlic, minced
1 T curry powder
1/2 t cayenne pepper
1 t salt
1/2 cup milk
3 cups Chicken Broth
2 to 3 cups shredded rotisserie chicken
2 packages ramen noodles, seasoning packet discarded
DIRECTIONS
- In a large pot over medium heat, heat vegetable oil. Add onion, and carrots and cook until tender, 6 to 8 minutes. Add garlic and stir until fragrant, 1 minute. Add curry powder and cayenne and season with salt. Stir until combined.
- Pour in the milk and chicken broth and bring to a simmer. Add shredded chicken, and ramen noodles and cook until noodles are al dente.
