Melting Potatoes
Melting potatoes are crunchy on the outside and pillowy soft inside. After one bite, your on your way to a through a golden, buttery outside, to a melt in your in mouth experience.
The Food Networks strikes again! I’m going to have to blame this on staying up late, waiting for miss teen. I had never heard of these before and was super excited to try them. You don’t know what to expect by the name, Melting potatoes? Like, what is that?
I watched the chef prepare this goodness and wondered if the recipe would turn out the same if I was to make it. I mean, they have a whole staff making sure everything comes out just right! I’m here to report that it did and it was easy!
You will be happy if you make these little gems!
Ii would go so well with Mississippi chicken for Sunday dinner, or Honey Parmesan Pork Roast.

Ingredients

- Preheat the oven to 400 degrees F.
- Peel the potatoes and slice off the ends. Cut into 1-inch slices. Season both sides of the potatoes generously with salt and pepper.
- Heat a cast-iron skillet (or other heavy-duty, ovenproof skillet) over medium-high heat. Add the oil and 4 tablespoons of the butter. Sear the potatoes on one side until golden brown, about 4 minutes. Flip the potatoes and add the broth, rosemary and garlic. Cut the remaining 6 tablespoons butter into cubes and scatter on top of the potatoes. Transfer the skillet to the oven and cook until fork-tender, about 30 minutes. Garnish with salt and spoon the pan sauce all over the potatoes.
Recipe Notes
- To add extra flavor you can add 1 tsp of dry herbs to the potatoes at the same time you add melted butter, salt and pepper.
