Peach Cobbler Muffins
These Peach Cobbler muffins will leave you reminiscing about grandma’s homemade cobbler! This is a great way to start your day with a smile or a quick dessert idea that will make you dance!
I’m not usually the one that is posting muffins on the blog. Cassie is the muffin queen! But Cassie doesn’t like peaches! I know, right? So I felt like it was my duty to step up! It’s peach season and we need to celebrate!
I feel like the muffin get a bad rap. Who says you can only have it for breakfast? The muffin is a perfect individual size dessert that would be perfect with a scoop of ice cream!
CAN I FREEZE THESE MUFFINS?
The answer is yes!!! If you are in the baking mood make a double batch and freeze half of them in an airtight container. When the mood hits you, you can pull out a muffin anytime!
SUBSTITUTIONS OR ADDITIONS
This recipe works well with any kind of fruit. You can replace the peaches with any berry, cherries or even pineapple. You can also add a different fruit with the peaches. If you want to get a little crazy you can add a nut for a little crunch!
Peach Cobbler Muffins
Ingredients
- Muffins
- 2 cups flour plus 1 tablespoon more
- 1 teaspoon salt
- 2 teaspoons baking powder
- 2 eggs
- ¼ cup salted butter melted and cooled
- ½ cup granulated sugar
- 2 teaspoons vanilla extract
- ½ cup milk
- 2 cups of fresh peaches, diced (you can use canned peaches)
- Streusel Topping
- ¼ cup salted butter cold and grated
- ⅓ cup flour
- 1/2 cup granulated sugar
Instructions
Preheat the oven to 425°F. Line a 12-cup muffin pan with cupcake liners or spray with non-stick cooking spray.
Sift together flour, salt, and baking powder in a small bowl and set aside.
In a large mixing bowl, combine together eggs, melted butter, sugar, vanilla, and milk.
Pour the dry ingredients into the egg mixture and stir gently, just until combined. Do not overmix.
Dice peaches into very small pieces (large chunks will weigh down the batter and add too much moisture).
Toss 1 cup of diced peaches with 1 tablespoon of flour and fold into the muffin batter.
Divide batter between the 12 muffin cups in the prepared pan, filling each cavity about ¾ of the way full.
Top each muffin with a few pieces of diced peaches.
Streusel: Combine the flour, sugar, and cold grated butter in a small bowl. Use a fork or pastry blender to combine the butter until the mixture forms a crumble.
Sprinkle streusel over the tops of the muffins.
Bake at 425 °F for 6 minutes. Turn down the heat to 350°F and continue baking for 15 to 18 minutes more until a toothpick inserted in the center of the muffins comes out clean.
Cool muffins in pan for 5 minutes. Remove muffins to a cooling rack to finish cooling.
