I love caramel apples! This is a caramel apple in cookie form! A lot of my kids love oatmeal cookies with raisins and I haven’t made those for a minute but this is a fun twist on your traditional oatmeal cookie!

I think this is my new favorite oatmeal cookie. Seriously, my husband couldn’t stop eating them!

 

 

TIPS AND TRICKS

APPLES: I love baking with Granny Smith Apples. It’s a great contrast when you have sweet parts of the recipe. If you don’t have Granny Smith go ahead and use what you have available to you.

STORAGE: These cookies stay fresh in an airtight container for up to 3 days, if you have any left! To freeze them, place them in an airtight container and they should stay good up to 3 months.

FROSTING: This frosting is more of a glaze. If you want it thicker, like a frosting, add a half of cup of powdered sugar until you get the consistency that you love.

Ingredients

  • FOR THE COOKIES:
  • 1 1/2 sticks.butter
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp cornstarch
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3/4 c. rolled oats
  • 1 Granny Smith apple, grated (about 3/4 cup)
  • FOR THE CARAMEL ICING:
  • 2 c. powdered sugar
  • 1 tbsp. apple cider or juice
  • 2 tbsp. caramel sauce

Instructions

  1. For the cookies: Preheat the oven to 350˚. 
  2. Brown the butter by melting it over medium heat in a medium saucepan, then let it cook and bubble for an additional 3 to 5 minutes or until the foam and butter underneath is golden brown. Pour into a large, heat proof mixing bowl and swirl a few times to help stop the browning. Let it cool to room temperature,. 
  3. Meanwhile, whisk together the flour, baking soda, cornstarch, salt, and cinnamon in a medium bowl; set aside. 
  4. Add the brown and granulated sugars to the mixing bowl with the browned butter and beat with an hand mixer for about 1 minute until creamy. Add the egg and vanilla, and mix until combined.
  5. Add the dry ingredients to the butter mixture and mix until combined. Mix in the oats and grated apple. Fold in the apple chips with a rubber spatula. 
  6. Scoop the dough into balls, about 1 1/2 tablespoons in size, onto two parchment lined baking sheets and and press gently with the bottom of a glass. Bake for 10 to 12 minutes, or until the edges are golden brown. Cool for 5 minutes on the sheet tray, before transferring to a wire cooling rack to cool completely. 
  7. For the caramel icing: Whisk together the powdered sugar, apple juice, and caramel sauce. Using a spoon, drizzle the cookies generously with the icing. Allow the glaze to set before serving, about 1 hour (at room temperature).

Notes

You can drizzle caramel on top or add chopped up apples.
