I love this Pea Salad so much, it’s easy and a healthy fun way to get your veggies in. for the day.

I’m always looking for ways to get my veggies in with out canceling them out with all the things to make them taste good. Peas are good on their own but sometimes you need to mix it up.

This is a great way to give your peas a little fanciness. Use this pea salad for your next get together and you won’t regret it!

 

 

Ingredients

  • 1 large package frozen green peas, defrosted
  • 6 slices turkey bacon, cooked and chopped
  • 1 medium red onion diced
  • 1 red pepper diced
  • 1/2 cup fat free cheddar cheese grated
  • 1/4 cup light sour cream
  • 2 tbsp. light mayo
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 clove garlic minced

 

 

Directions

  1. Cook bacon in a skillet over medium-high heat for about 5 minutes, flipping halfway through. Let cool then chop up.
  2. Meanwhile, add remaining ingredients to a large bowl and toss to combine. Let flavors mingle for at least 30 minutes then serve and enjoy!
