Pineapple Chicken and Rice
Get out your skillet! It’s time to make something delicious! It’s a perfect combination of sweet and savory that comes together in just one pan! Can I get a Hallelujah?
Who knew that cooking could be so easy and delicious at the same time! It’s especially delightful when you can just throw everything into one pan and forget about it! Am I right?
TIPS AND TRICKS
STORAGE: You can store your leftovers in an airtight container and it should be good up to 3 days.
BELL PEPPERS: I used a red bell pepper because I love the pop of color and the flavor, but if you prefer a different pepper, go ahead. Heck, if your kids won’t eat them, leave them out!
VEGGIES: If you needing more veggies in your life, add some broccoli, carrots or a rainbow or bell peppers.
SPICE: Go ahead and add a pinch of red pepper flakes for a little kick!
PINEAPPLE: If you don’t think I added enough pineapple pieces, go rogue, and add until it makes your heart happy!
Pineapple Chicken and Rice
Ingredients
- 1 cup long grain rice
- 1 cup pineapple, cubed
- 1 lb. boneless, skinless chicken thighs
- 1 Tablespoon olive oil
- 1 small onion, chopped
- 2 to 3 cloves garlic, minced
- 1 red bell pepper, diced
- 2 cups chicken broth
- 2 tbsp. soy sauce
- 1 tsp ginger
- salt and pepper , to taste
- 1/2 cup green onions, diced
- 1 Tbsp. sesame seeds
Instructions
Heat olive oil in a 12" skillet over medium-high heat.
Add chicken cubes to skillet, and then season with salt and pepper and add to the skillet. Cook until browned but not completely cooked through; about 3-4 minutes turning once. Remove chicken from pan, and set aside.
In the same skillet. Add onion, garlic, red bell pepper. Cook until the veggies are soften. Add the pineapple and cook an additional 2 minutes.
Stir in the long grain rice, chicken broth, soy sauce, ginger, salt and pepper. Stir to combine. Bring to a boil over medium heat, then cover and reduce heat to low.
Cook for 20 minutes without lifting the lid. Check the rice for doneness. Continue cooking if necessary, checking every couple of minutes. Return the chicken to the skillet, and mix well.
Stir in the green onions, and sesame seeds.
