Creamy Chicken Pasta
Creamy chicken pasta is easy to make a weeknight one-pot pasta dish! With only 30 minutes of total work, this chicken dinner recipe is simple, fast, and delicious!
Spring activities are in full swing! Every night we have softball practice, games and then you throw in a little cheer into the mix and life gets a little crazy! Half the time, all I want to do is run to the local fast food place and pick up dinner because I’m done for the day but then my mom guilt kicks in and I want and know that I need to feed my family something tasty and good for them.
It’s really hard at our house because I have such picky eaters that sometimes they don’t even want to try it before they even see what I have made!
I really try to come up with recipes that are full of flavor and are super easy! I can honestly say that this one is a keeper! My 17 year old even came home for lunch to eat leftovers. Can I get a hallelujah??? Your mom’s out there know what I’m talking about!
Creamy chicken pasta
Ingredients:
12 ounces of pasta noodles
2 Tablespoons butter
2 cups rotisserie chicken, cubed
salt and pepper to taste
3 cloves garlic, minced
1 onion, diced
3 to 4 carrots peeled and diced
3 stalks celery, diced
1 cup fresh shredded Parmesan cheese
2 Tablespoons parsley
sauce:
3 Tablespoons butter
3 cloves garlic, minced
1/2 cup flour
2 cups chicken stock
1 teaspoon parsley
1/2 teaspoon onion powder
salt and pepper to taste
Directions:
- In a large pot, cook pasta according to package instructions and drain well.
- Sauce: In a large pan, melt butter on medium heat. Add garlic and cook, stirring frequently for about a minute. Whisk in the four until lightly browned, it will take about 1 to 2 minutes. Slowly whisk in the chicken stock, parsley, and onion powder.
- Cook, whisking constantly until the sauce has begun to thicken, and season with salt and pepper, to taste. Set aside
- In a large pot, melt 2 Tablespoons butter on medium heat, add 3 cloves garlic, onion, carrots, and celery. Cook, stirring occasionally until veggies are tender. Stir in the chicken and let cook until the chicken is hot.
- Stir in the pasta, sauce, and Parmesan cheese until the cheese has melted and heated through.
