Apple Topped Pork Chops with Mashed Sweet Potatoes
This is such a great recipe, it’s so easy to do, but looks and tastes like you spent a lot of time slaving away in the kitchen.
Apple Topped Pork Chops with Mashed Sweet Potatoes!
INGREDIENTS
Apple Topped Pork Chops with Mashed Sweet Potatoes
4 pork boneless pork loin chops
1 apple
1 small onion
1 large sweet potato
1/2 cup of apple juice
2 T. brown sugar
1 t. cinnamon
2 T. Olive Oil
1 T. butter
Salt and pepper to taste
Apple Topped Pork Chops with Mashed Sweet Potatoes!
Directions:
Slice your onion and apple thinly. Heat a skillet over medium-high heat. Salt and pepper your pork chops. Sauté onion and apple in olive oil in a skillet until they start to soften. Add pork loins and pour 1/4 cup of apple juice into the pan. Cover and let simmer until pork loin is cooked through. Take the lid off and let the pork loin brown, once the liquid evaporates.
Meanwhile, chop your potato and boil until soft, about 10 minutes. Once it’s soft, mash and add remaining 1/4 cup of apple juice, butter, cinnamon, and brown sugar.
We served ours with a salad with craisins, mandarin oranges, sliced almonds, and Poppyseed Dressing. It was delicious and a sweet and savory meal.
