Banana Peanut Butter Cookie
Banana Peanut Butter Cookie! My family is always telling me to buy bananas so they can start to eat a little healthier. It never fails, I always end up with super ripe bananas and I don’t want to just throw them away. I usually do my old stand-by of banana bread but this time I wanted to try something new! Banana Peanut Butter Cookies!
I was a little giddy when I was making these cookies because I love peanut butter and I love bananas! These little gems are so moist and soft that they almost melt in your mouth!
- 1/2 cup peanut butter
- 1/4 cup butter, softened
- 1 cup brown sugar
- 1 teaspoon vanilla
- 1 ripe banana, smashed
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 3/4 cup flour
- white sugar for rolling
- Preheat oven to 350 degrees.
- In a bowl, cream together peanut butter, butter, and sugar. Add the vanilla and banana and mix well.
- Add the dry ingredients and mix until just combined.
- Form dough into golf size balls and then roll them in the sugar. Place on baking sheet and press a criss cross with a fork on top of the cookie.
- Bake for 9 to 11 minutes.

My boys were just asking for peanut butter cookies. They would love the banana flavor.

FYI… You can peel and freeze the over-ripe bananas for use in veggie smoothies. One ripe frozen banana can completely over power the taste of spinach, kale…or just about anything else.
