Like I said yesterday, I am having a hard time to find the energy to want to cook dinner. I’m tired. I am not sleeping well and Grey hasn’t been sleeping well either. We are 4 weeks from baby and I am starting to feel nervous. I don’t know why I feel so nervous about this child, but I do. I get home and I just want dinner to be ready.
I threw this in the crockpot yesterday afternoon at lunch and it tasted great last night. Dinner was easy to throw together which I totally appreciated the lack of effort when I got home. The boys and I were starving! It was so good!
Beef Fajitas Freezer Meal
Ingredients
- 1 pound beef roast
- 1 onion, diced
- 1 red bell pepper, diced
- 15 oz can diced tomatoes, drained
- 1 cup beef broth
- 3 cloves of garlic, minced
Directions
- Cut the roast into 3 even pieces. Add beef, onion, bell pepper, diced tomatoes, broth and garlic to a gallon freezer bag.
- Seal the bag and push out all the air.
- Thaw in the fridge overnight. Cook on low for 5 to 6 hours.
- Cut or shred the beef and serve with whatever toppings you like. Matt likes fresh peppers and onions, but serve it however you would like!!
