Best Ever Banana Pancakes! When you have banana’s coming out of your ears and you don’t know what to make, make these Best Ever Banana Pancakes!
Okay, so I have a little bit of an addiction to bananas. For some reason I really like them. Probably because they are cheap to buy and absolutely delicious.
Matt is now sick of them and won’t help me eat them. Now they go brown so obviously, I throw them in the freezer so I can use them later. Well that hasn’t been happening so now I look and I have over a dozen frozen bananas!
It’s almost starting to stress me out because we have made freezer meals and I need to clear out these bananas STAT! We made these pancakes this morning and don’t be surprised if I bring you one maybe 10 loaves of banana bread in the near future because they have got to go!
Everyone loves banana bread, right?! Until then, try these banana pancakes to tide you over until then!
We have a ton of leftover honey butter from our family reunion, so we put on the pancakes. It was super good! These pancakes rocked my socks!
Best Ever Banana Pancakes
Ingredients
- 1 1/2 cups flour
- 2 tablespoons sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large, over-ripe banana, peeled
- 1 cup and a tablespoon of milk
- 2 large eggs
- 1 teaspoon vanilla
- 4 tablespoons butter melted
Directions
- Mash the banana in a large mixing bowl. Then add milk, eggs, and vanilla. Whisk until well mixed. Slowly add in melted butter while whisking.
- Next whisk in salt, baking powder, and sugar. Stir until combined. Last, slowly add flour constantly stirring to prevent clumps.
- Heat nonstick skillet to medium heat. When warm pour a half cup of batter into the pan. When the batter begins to show bubble all over the pancake then flip. Cook the next side until golden brown.
- Serve warm!
