CANNING Salsa Chili Sauce Pickles Relish
This post is all about my cute husband, his sisters and his mom!! My husband has been helping his mom can the past few weeks and this is the fruit of their labors. Canning is a great way to spend time together and enjoy stories, laughs and memories. It does take time but you have yummy things to share with family and friends.
I thought I would share a few of the great recipes and Mike’s “Must Have” Chili Sauce.
CANNING Salsa Chili Sauce Pickles Relish
CHILI SAUCE
4 quarts of ripe tomatoes– peeled and sliced
3 large onions- ground
1/2 cup jalapeno peppers-ground
1 red pepper
1/4 cup salt
Bring to a boil and cook for about 4 hours, stirring frequently. It will be quite thick.
Add:
3 cups sugar
1 1/2 cups vinegar
2 teaspoon cumin
1 Tablespoon cloves
1 Tablespoon ginger
1 teaspoon nutmeg
Cook until the sugar is dissolved. Pour into pint bottles leaving a 1/2 inch.
This is great on any kind of meat and eggs. Its sweet and spicy!
SALSA
This is my mother in laws, best friend Joan’s recipe. Did you get that? I love having salsa in the house and ready to go because my older kids come home on Sunday and open up a bottle of salsa and tortilla chips. It usually includes great conversation and a lot of laughs! When I mentioned that we would like to can some salsa, Beverly, told me that this was the BEST!
1 bushel of tomatoes- sliced and peeled
1/2 cup garlic- chopped
2 quarts of red and green peppers- chopped
22 jalapenos- chopped(remove seeds if you want less heat)
2 quarts onions- chopped
2 1/2 Tablespoons cumin
1 Tablespoon plus 1 teaspoon paprika
1 1/2 cup sugar
4 Tablespoons black pepper
1 cup salt
2 cups apple cider vinegar
Boil for 2 hours. pour into pint bottles leaving a little space at the top. Heat will seal the bottles, you don’t have to process them.
SWEET RELISH
1 Quart onions- chopped
1 Quart green tomatoes-chopped
1 Quart cucumbers- chopped
9 green peppers- chopped
3 red peppers- chopped
1 quart white vinegar
1 quart sugar
1 teaspoon mustard seed
1/2 cup salt
1 teaspoon turmeric
Bring to a boil and cook for about 45 minutes. Stir frequently.
My husband loves this on his hot dogs and burgers!!!!
CANNING Salsa Chili Sauce Pickles Relish
DILL PICKLES
This is my husbands grandma Florence’s recipe!
1 teaspoon alum
8 cups water
1/2 cup salt
2 1/2 to 3 cups white vinegar
1 teaspoon dill seed
Bring to a boil.
Pack each bottle with fresh dill
1 to 2 cloves of garlic for each bottle
We love dill pickles!!! Some days, I swear, my girls will eat a whole bottle in a couple of hours!!
