Caramel Apple Spice Cake!
Fall is here my friends. I can feel the crispness in the air, and Fall foliage is to DIE for! I am so in need a of a drive up the mountains. I can see the bright orange leaves on the mountain from my house, but we haven’t had a chance to get up there yet, and I’m afraid I’m going to miss it! This cake was my way of bringing Fall into my house!
I had some adorable helpers today. My baby is 2-months-old now and Sophie is 4! Excuse me while I sob in the corner for a moment… Okay, I’m better now. Back to the cake.
You’re going to love the taste and how easy it is to make it look beautiful!
Caramel Apple Spice Cake
(makes 2, 9 inch rounds)
3 cups of Applesauce
2 cups of sugar
1/2 cup of butter
3 cups of flour
4 t. baking soda
1 t. salt
1 T Cinnamon
1/2 T Allspice
1/2 t. cloves
2 apples
1 lemon
1/4 cup of caramel sauce (store-bought is fine and makes your life easier)
Powdered sugar (optional)
Caramel Apple Spice Cake
Directions:
Preheat oven to 350 degrees. Prepare 2 9 inch round cake pans with a think layer of Crisco and a dusting of flour. Heat applesauce in a large saucepan, add butter and sugar. Mix dry ingredients in a separate bowl and whisk together.
Slowly add dry ingredients to the applesauce mixture. Thinly slice apples and then cut in half to make half-moon shapes.
I used a mandolin, but if you’ve got ninja knife skills go ahead and do it with your knife! Then add the sliced apples to cold water with lemon juice to prevent them from browning.
Before you assemble your cake, blot off each apple so they’re not soaking wet. Pour half of the batter into each pan. Assemble apples on top of one cake starting on the outer rim, overlapping each slice just a little, repeat process until the entire cake is covered in apple slices.
Bake for 35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake rest for 10 minutes, and then run a knife along the edges of the pan to loosen it, and gently pop it out. When the cake has cooled, assemble the cake by pouring a little caramel on the bottom layer, put the apple layer on top and drizzle with remaining caramel and dust with powdered sugar (optional) Beautiful results with minimal effort! That’s my kind of cake y’all! I guess I’m southern now… I’m cool with that…
I really want to eat this now, but sadly it was devoured in an hour by my children. It’s cool though, it’s easy to make more! What are your favorite Fall desserts?
