Carne Asada Fajita Salad!
It’s still warm enough outside to use the grill, and I love grilling because it usually means less cleaning for me! I’m addicted to this Carne Asada recipe.
It’s so YUMMY! I know we say that all the time, but it’s true! We don’t share things that aren’t muy delicioso!
This marinade tastes best if you let it do its thang overnight in the fridge. You want all the spices and citrus to have time to get together and soak into the meat. So don’t rush it, if you can help it!
Carne Asada Fajita Salad
Marinade
2 pounds flank steak
1/3 cup of vinegar
1/2 cup of soy sauce
1/2 cup light tasting oil (try avocado oil if you have it)
1 t. cumin
1 t. garlic salt
1 t. paprika
1 t. Mexican Oregano
1 t. chili powder
4 T. chopped cilantro
1/2 t. salt
1/2 t. pepper
Juice from 2 limes, fresh is best (about 4 Tablespoons)
6 cloves of garlic (crushed and chopped)
Carne Asada Fajita Salad
Directions
Combine all the spices, oils, etc… in a large bowl and add the flank steak. Cover with plastic wrap and leave in the fridge to marinate overnight!
Grill marinated flank steak to your preferred doneness! I usually like medium rare, but we cooked it a little longer this time.
If you’re feeling crazy, which I usually am, serve it with a yummy salad. I sautéed onions and mushrooms, made some homemade guacamole, and threw it all together with a little cheese, sour cream, and salsa! So GOOD!
