Chicken and Rice Casserole
It’s January! After running around making things merry and bright through the month of December, it’s time to snuggle into a warm house and enjoy your family. With the weather so cold, all I want is comfort food that is good for me!
The great thing about casseroles is that you can make it the night before and all you have to do is throw it in the oven and in minutes you have a warm, delicious meal ready for your family.
Chicken and Rice Casserole
Ingredients:
1 1/2 cups frozen peas
1 1/2 cups carrots, chopped
1 cup onion, diced
3 cups chicken. diced and cooked ( I used a Rotisserie chicken)
1 (8 ounce) can water chestnuts, drained
1 can condensed cream of celery soup
1 cup mayonnaise
2 cups Minute® Ready to Serve Rice, prepared according to package
1 cup cheddar cheese, grated
1 teaspoon salt
1 teaspoon pepper
Panko bread crumbs
Chicken and Rice Casserole
Directions:
- Preheat oven to 350 degrees
- Mix all the ingredients together but the bread crumbs and pour into a greased casserole dish.
- Sprinkle bread crumbs all over the casserole.
- Bake for 20 to 25 minutes or until bubbly.
