When I decided to share this recipe with you, I realized that I haven’t used any cream of soups for awhile! At the first of my marriage, it felt like every recipe that I would make, had a can of cream soup.
We didn’t have the internet back then, so you relied on recipes that were passed down from generation to generation. I remember one time my grandma wanted me to make a certain dish and she brought over the recipe card and the ingredients. Now all we have to do, is look on Google and we find so many delicious things to make.
This creamy deliciousness has all the feels of your grandmas cooking but can be made in minutes because of all convenient things we have now!
TIPS AND TRICKS
SOUP: I used the regular cream soups but feel free to use the low sodium. If you do, I would suggest using some fresh herbs to substitute for the salt.
SOUR CREAM: I have used the low calorie version before, and you really can’t taste the difference. Another option is Greek yogurt.
CHICKEN: I love using a rotisserie chicken, just for the convivence, but if you already for chicken at home, cook it up! You can also substitute turkey, hamburger for the chicken.
VEGETABLES: You can add broccoli, baby spinach or green beans to make it a complete dinner.
STORAGE: This will last in your fridge for up to 3 to 4 days, if covered tightly. You can also freeze it up to 3 months. I would double wrap it for the freezer.
Chicken Casserole Topped With Ritz
Ingredients
- 1 cup sour cream
- 1 (10.75 oz) can condensed cream of chicken soup
- 1 (10.75 oz) can condensed cream of mushroom soup
- 1 cup chicken broth
- 5-6 cups cooked, shredded chicken (from 1 large rotisserie chicken)
- 10 ounces pasta, cooked according to package instructions
- 2 cups grated Mexican blend cheese
- 2 sleeves Ritz crackers, coarsely crushed (about 60 crackers total)
- 1 ½ sticks (12 tablespoons) butter, melted
Instructions
- Preheat the oven to 350°F. In a large bowl, whisk together the sour cream, condensed soups, and chicken broth. Add the chicken, cooked pasta and stir to combine.
- Transfer the chicken mixture to a greased baking dish.
- Sprinkle the cheese on top.
- In a small bowl, combine the Ritz crackers and the melted butter. Add the buttered cracker crumbs to the top of the casserole.
- Bake, uncovered, for 30-35 minutes, or until the filling is hot and bubbly, the cheese is melted, and the cracker topping is browned.
